Memorial Weekend 2010

Most Memorial Weekends, you would more than likely find me at the lake..... Not this year.  We are headed North to CHICAGO for a weekend of fun with friends!  I have been to Chicago a few times and have never really experienced the city.  Jack's sister lives in Wilmette, just outside of the city, so we normally just stick around that area.  Not this weekend.  This weekend I am prepared to be a full blown TOURIST!  Luckily a boat tour is on our list of things to do, as well as "Second City" comedy club and the Cubs vs. Cardinals game on Saturday.  Jack keeps preparing me for the baseball game telling me that it is like "OU/Texas".  It better not be let down, Jack!!!  Apparently Cubs vs Cards is a HUGE rivalry, and me being.... well, not a baseball follower..... I was not aware of this.  Luckily for Jack, I am into football, but other sports not so much.... BUT, I do love drinking beers, good weather and game day hotdogs :)  HELLO, SIGN ME UP!!!

In other news, Velcro Dog turns 2 on Sunday!  I can't believe how much he has changed.  I will be picking him up a birthday souvenir in Chicago.  Luckily Jack and I get back to Tulsa on Sunday night, so we will be able to spend the evening with our little baby boy.

Little Abby is GRADUATING!


This weekend, my little sister will be graduating from OU.  I am so extremely proud of her!  I remember my college graduation like it was yesterday!  Live it up this weekend, Abby.  You don't have much longer until you are an 8-5 working girl.  Trust me, working isn't as cool as college......

Philly me PLEASEEEEE!

Okay, on Monday night I made Philly sandy's for dinner.  The Philly I made is 330 calories.  I found it in this smart healthy cooking magazine.  I love a good Philly Cheesesteak Sandwich, so I had to give it a try.  Attention vegetarians:  You may not like what you are about to read...

What you will  need:

Chopped white onion (1 cup - more if you love onions)
Canola Oil
Top Round Steak 1.5 lbs.
Salt
Pepper
Provolone Cheese Slices
Whole Wheat Hogie Buns

Slice steak into 1/8 inch strips.  You want your strips pretty thin.  Set aside.
Chop 1 cup onion, put in a pan on Medium-Low heat with 1 tsp. Canola Oil and a few shakes of salt.  Put a lid over the onions for about 8-10 minutes, stirring occasionally.
Once onions are soft, throw in your steak strips, add 1tsp. Canola Oil, a few more shakes of salt and load it up with pepper (if you have met my husband, you know he likes pepper).  Cook steak and onions together until the steak is cooked through.  Be careful not to OVER cook.  Right before it is finished, throw 2 slices of Provolone cheese over the meat and onion mixture.  Let set until it starts melting then stir it all together.  Scope up servings and place on your hogies (we toasted our buns).

Mr. Spoiled

I would say out of everything I buy on a monthly basis, I spend the most money on decor / stuff for my house and VELCRO DOG.  Yes, Tank is so spoiled, but I love it.  I have really calmed down a lot, though.  Last year I was buying him a new $39 collar every month it seemed like (shhhh!  Don't tell Jack, I tell him they are like $20).  And don't even get me started on the amount of toys this kid has.  Every time I go to Pet's Mart I come home with a little something special for him.  It's no wonder I am his favorite parent :)

I recently came across this website for Dog Duvet's called Molly Mutt.  I know it sounds cheesy, but the concept is wonderful.  You fill your own dog bed with old shirts, blankets, etc.  This is not only easier to clean, but you aren't buying a new dog bed every 6 months!  You can purchase different covers or "duvet's" to change around your look as well.  By having a reusable, re-washable dog bed, Molly Mutt is also helping keep old dog beds and things we throw out, out of our landfills.

About 2 1/2 weeks ago.....

Me: "I was able to buy a lot of Fiesta decorations because Cinco De Mayo is coming up and all of the party stores have all of their stuff out."

Mom (Mother T):  "Wait, when is Cinco De Mayo???" 

Me: "Are you serious right now, it's May 5th..... CINCO de MAYO.  5th of May"

Mother T:  "Well..... I didn't know that."
