Velcro Dog Goes to Camp

I just finished filling out Tank's "Camper Application" for Camp Bow Wow.  We have an interview set up for Friday at 3pm to see how Tank interacts with the other camper's.  Hopefully Tank will be on his best behavior!  His friend Hank goes to camp bow wow and he loves it!

Jack and I are going out of town next weekend for a shower in Austin.  We have never boarded Tank overnight, but we have been thinking a lot lately and we both think Tank would LOVE it.  He is such a happy dog and loves making new friends. 

I hope after filling out two pages of paper work, requesting Tank's Vaccination Report, and having a full out interview that the Judd's pass the test!  I will keep everyone posted.

Lasagna Rolls

I was chatting with the writer of ppppfffffttttt.blogspot.com yesterday and we were gabbing about our Valentine's Day weekends.  She mentioned that her and her husband Roberto made Lasagna Rolls for Valentine's dinner.  I told her I needed the recipe immediately.  Jack LOVES Italian and I love a good heavy meal.  Now the writer of ppppffffffttttttt, Alexis, is kind of a vegetarian, so there was no meat in there meal.  That is the only variation I added to the recipe.  I hope you all enjoy and thank you, Alexis!  Everyone be sure to check out her blog.

Lasagna Rolls

What you need:
Salt
1/2 pound (8 to 10) uncooked Lasagna Noodles (I used whole wheat)

Nonstick cooking spray
1 cup ricotta cheese
1 1/2 cups prepared marinara sauce
1 1/2 cups packed baby spinach
1/2 cup shredded mozzarella
1/2 lb. - 1 lb. lean ground beef (more or less depending on how many noddles you are making)

How to make the Rolls:
Preheat oven to 400°F. Meanwhile, bring a large pot of salted water to a boil, add noodles and cook until al dente, 8 to 10 minutes. Drain well and gently transfer to a clean work surface. Grease a small roasting pan or casserole dish with cooking spray; set aside. Working with one noodle at a time, spread with about 2 tablespoons of the ricotta and 2 tablespoons of the marinara, if you are adding ground beef put it on top of the marinara, then top with spinach.  Starting at one end, roll up noodle snugly then arrange in pan either seam-side down or with the rolls close enough together to hold each other closed. Pour remaining marinara over assembled rolls then sprinkle with mozzarella and bake until golden and bubbly, 20 to 25 minutes.

Eventful Weekend

So my weekend was full of wonderful surprises!  Jack came home on Friday with my Valentines Day gifts!  He is so sweet and did a great job.  He got me this BEAUTIFUL orchid (that I am HOPING I can keep alive), some other goodies and this amazing JimmyJane candle that you light and blow out  once there is enough wax - and you can give each other massages with the hot wax!  We tried it out yesterday and it was wonderful.  And the smell of the wax was SO GOOD.  I think the one Jack got me is grapefruit scent.  For those of you that live in Tulsa, they carry the candles at Muse in Utica Square.



































Another surprise from this weekend was that Velcro Dog caught his first bunny this weekend!  Jack and I came home from dinner on Saturday night and Tank spotted a bunny, ran after it and actually CAUGHT it.  I couldn't believe my eyes.  I felt so bad for the little bunny.  Tank didn't actually kill the bunny, he just kind of broke it's back and then it started limping slowly around the backyard.  Jack had to lead the bunny out of our side gate.  I screamed so loud I am pretty sure I woke the neighbors......  We are proud of Tank, but I think he felt bad that he hurt (probably killed) his little friend.  My mom said that this year the Easter Bunny probably wouldn't be visiting Tank.... I bet she is right :)  Hoppy Valentines Day!



















Last but not least, Jack and I beat the new Mario Brother's game for wii on Sunday.  BEST DAY EVER.  I have been wanting to do this since I was a little girl playing regular Nintendo.  Dreams come true on Valentine's Day!

My Super Bowl Weekend...

Congratulations to the Saints for winning the Super Bowl.  I can't get that picture of Drew Brees and his little son out of my head.  To sweet for words.



Jack and I were very excited for our Sunday dinner.  He was able to bust out the electric smoker again and smoke a brisket for close to 9 hours.  It was so delicious, juicy and practically fell apart.  I have to say it was his best job yet. 

I was also able to partake in some Sunday FUN (you all may not think this is fun, but if you know how much I love chicken tenders, you will know why I was so thrilled about his purchase).  I invested in a little fryer - $49.00 at Bed, Bath and Beyond...... We had a Fry Daddy growing up, but this little deal blows that Fry Daddy out of the water - it came with a basket and lid!  With our delicious brisket we wanted to be able to fry some okra.  Sunday afternoon I tested it out on some CHICKEN TENDERS.....AMAZING!  If you like fried food I would definitely suggest getting one of these little babies.  There are so many different recipes that it came with and I am hoping to try them each out.  To all of my "wanna' be vegetarian friends", this probably isn't for you.... If you want to be a "skinny bitch" you can't eat fried food, oh... or meat, I forgot!






































Friday I went to Purple Glaze on Brookside.  I kind of felt weird because I was by myself, but I highly enjoyed it.  It is a pottery place where you can pick out different pieces and paint them.  The studio fee is $6 and then however much your pieces cost.  That includes paint, baking, glaze, etc.  I painted a picture frame ($14) for Jack from Tank for Valentine's day.  It was so sweet on Tank to think of that idea.  While I was there I also painted a planting pot ($18) for myself.  I am SO READY FOR SPRING, so this definitely made me even more excited.  It is already sitting on our back porch with no flowers in it....

Everyone Has A Guardian Angel, I Call Mine Mom...

Ever since the first time I heard that quote, I have used it as my own.  I made my mom a bench for mother's day one year and painted that quote on it.  In my book of wedding pictures that quote is used under a picture of my mom and I..... I just love it because it is so TRUE!  My mom is my guardian angel.  She is ALWAYS there for me, always looking out for me, would do ANYTHING in the world for me.... You get the picture.  I love Mother T.....

Last night Mom was in a car accident she was THANKFULLY able to walk away from.  She could have been seriously hurt, but luckily being the strong Christian woman she is and having such strong FAITH, God was sitting in the passengar seat of her car and she was unharmed.  I keep praying and thanking God for protecting her.  I ask that each of you reading this blog keep my mom in your prayers as she fights through the soreness and bruises.

Go hug your mom today, or give her a call and just tell her you love her.  Nobody is guarenteed tomorrow so don't take today for granted....
